YOGYAKARTA, KOMPAS.com - Biji mangga, orang Jawa menyebutnya pelok, merupakan limbah yang hingga kini belum dimanfaatkan. Di Indonesia, pelok sangat melimpah, setidaknya 1 juta ton dihasilkan setiap tahunnya. Di tangan anak-anak muda kreatif dari Universitas Gadjah Mada (UGM), limbah buah mangga ini dapat diolah menjadi produk pangan yang sehat dan bernilai ekonomis.
Mereka adalah Fajri Harum Rahmawati (Teknologi Industri Pertanian/2008), Ika Kartikawati (Teknik Industri/2010), M. Irfan Anshory (Teknik Mesi/2008), dan Titin Haryanti (Budidaya Hutan/2008). Keempat mahasiswa itu berhasil mengolah limbah buah mangga tersebut menjadi es sumsum limbah pelok mangga tuo atau Es Sumanto.
Fajri Harum mengungkapkan, limbah pelok selama ini belum dimanfaatkan. Padahal, di Indonesia pelok mangga sangat melimpah yaitu 1 juta ton per tahun. Dan yang bisa dimanfaatkan setidaknya terdapat sekitar 200 ribu ton per tahun.
"Selama ini, belum ada yang memanfaatkan ataupun mencoba mengolahnya. Padahal pelok kaya vitamin C, juga mengandung senyawa tannin dan flavonoid yang merupakan anti oksidan sebesar 18 persen, kaya serat dan rendah lemak, " kata Fajri, Selasa (15/5/2012).
Dengan mendapatkan dana hibah sebesar Rp. 5 juta dari Dikti melalui program kreativitas mahasiswa bidang kewirausahaan (PKM-K) keempat mahasiswa tersebut bergerak mengolah limbah pelok mangga menjadi Es Sumanto.  Fajri menambahkan, untuk bisa dinikmati menjadi Es Sumanto, pelok mangga dibuat menjadi tepung terlebih dahulu. Langkahnya, pelok dikupas dan dibersihkan kemudian diiris tipis-tipis dan diblender.
Hasil blenderan tersebut diekstrak untuk memisahkan padatan pelok yang masih kasar dengan yang sudah halus. Berikutnya, lanjut Fajri, padatan pelok halus yang masih tercampur dengan air diambil dan diendapkan sekitar setengah hari. Setelah mengendap air dibuang, sementara padatan pelok halus dikeringkan langsung di bawah sinar matahari selama 1 hari. Usai dikeringkan, hasilnya dihaluskan sehingga diperoleh tepung pelok mangga sebagai bahan untuk membuat bubur sumsum.
"Dari 1 kilogram pelok mangga bisa diperoleh sekitar ¼ kilo tepung pelok mangga. Tepung pelok mangga ini dicampur dengan tepung beras, santan, gula, dan air kemudian dimasak hingga mengental menjadi bubur sumsum," kata Fajri.
Disebutkan Fajri, untuk membuat 1 adonan bubur sumsum ini membutuhkan 3 sendok makan tepung pelok mangga, 3 sendok makan tepung beras, 500 ml air, serta santan dan gula pasir secukupnya. Dari adonan tersebut bisa dihasilkan 3 hingga 4 cup es Sumanto ukuran 200 gram.
"Agar lebih nikmat, kita tambahka sirup ke dalam es Sumanto ini. Untuk sementara ini varian rasa sirup yang ditawarkan adalah rasa buah kawista, Coco Pandan, Jeruk, dan Mangga. Untuk 1 cup kami jual Rp 4000,-," pungkas Fajri.
